Sci. 2009 , 37 (24) : 117 14 - 117 16 责任编辑 　王淼 　责任校对 　傅真治 金银花 ·菊花 ·甘草复合保健凉茶饮料的工艺研究 1 2 1 1 宋照军 ,蔡超 ,刘 玺 ,邱宏强 　( 1. 河南科技学院 ,河南新乡 453003; 2. 郑州旅游职业学院 ,河南郑州 450004 ) 摘要　[ 目的 ] 探讨制作金银花、菊花、甘草复合保健凉茶饮料的最佳工艺条件 。[方法 ] 采用正交试验分别获得制备金银花汁、菊花 汁、甘草汁时的最佳浸提条件 , 以金银花汁、菊花汁、甘草汁、柠檬酸、白砂糖含量为因素 , 以产品的外观、颜色、气味、口感等感官评分为 指标 ,通过正交试验 ,得出该复合饮料的最佳配方 。[结果 ] 金银花最佳浸提条件为加水量 40倍、温度 90 ℃、时间 30 m in;菊花最佳浸提 条件为加水量 60倍、温度 90 ℃、时间 30 m in;甘草最佳浸提条件为加水量 10倍、温度 90 ℃、时间 4 h。该复合保健凉茶饮料的最佳配方 为 :金银花汁 20% 、菊花汁 15% 、甘草汁 10% 、白砂糖 10% 、柠檬酸 0. 12% 。[结论 ] 该产品呈金黄色 ,均匀一致 , 口感爽口,具有金银花、 菊花和甘草的天然风味。 关键词　金银花;菊花;甘草;复合;保健饮料 ( ) 中图分类号　TS2 15. 2　　文献标识码　A　　文章编号　0517 - 6611 2009 24 - 11714 - 03 Study on the Technology of Com pound Hea lthy An tipyretic Beverage of Honey suckle, Chry san them um and L iquor ice ( ) SO NG Zhaojun et a l　 H enan Co llege of Science and Techno logy, X inxiang, H enan 453003 A b stract　[Objective ] The study aim ed to discu ss the op timum technological condition for p rep aring the compound health care herbal tea bev erage of honeysuck le, chrysanthemum and liquorice.
