MAO纳米材料吸附茶汤氟的初步研究 施小云,陈红波,王京奇,王岳飞,杨贤强 (浙江大学茶学系,杭州 310029 ) 摘要:通过合成对氟离子具有专一性吸附的纳米级镁铝复合物(MAO ),以康砖茶为试材,研究了不同时间、温 度、pH 值和MAO 浓度对砖茶茶汤氟的吸附效果。结果表明,在茶水比为1:10 的50ml 茶汤中加入0.2g MAO, 40 ℃, pH =5 ,180 rpm 振荡1h 时,吸附氟的效果最佳,吸附率达到74.6%;不同的MAO 浓度处理后,茶汤中咖啡碱含 量变化不大,氨基酸和茶红素含量略有增加,茶褐色素含量显著增加,而茶多酚含量显著降低。因此,MAO 纳 米材料对茶汤氟的吸附效果较好,但对改善茶汤品质的影响,尚需进一步研究。 关键词:茶学;茶汤;降氟; 纳米材料;吸附;品质 Study on Nanomaterial MAO Absorbing the Fluoride in Tea Infusion SHI Xiaoyun, CHEN Hongbo, WANG Jingqi, WANG Yuefei , YANG Xianqiang (Department of Tea Science, Zhejiang University, Hangzhou 310029) Abstract: This study was conducted to investigate the effectiveness of nanometer MAO to adsorb the fluoride of brick tea infusion. The effects of temperature, time, MAO dosage, pH value on adsorption were studied. The results showed that the MAO had an excellent performance to adsorb fluorine, at a 0.2g MAO, pH = 5, 180 rpm oscillation , 60 min in 50ml of tea infusion with 1:10 of tea and water ratio. The adsorption rate is 74.6%. In addition, different treatments of MAO dosages had some effects on qualities of tea infusion. Compared to the control, content of caffeine had little change, content of amino acids and thearubigins had slight increases, and teabrowns content significantly increased, but contents of tea polyphenols significantly decreased. In short, there is a high adsorption of MAO on the fluoride in brick tea infusion, and it had some effect on tea qualities, so we have a further study in the future.
